Ready in minutes

Here is my favourite no-cook ready in minutes lunch at work.  All that needs to be done is to toss all ingredients together plus some minor cutting and chopping. Delicious and wonderfully filling.

  • a tin of red kidney beans
  • 5-6 cherry tomatoes, halved
  • a third of feta cheese block, cubed
  • a few olives
  • one beetroot (cooked), cubed
  • chopped coriander leaves, some onion
  • sprinkling of olive oil and balsamic vinegar
  • for the adventurous types – a few grapes, halved
