Here is my favourite no-cook ready in minutes lunch at work. All that needs to be done is to toss all ingredients together plus some minor cutting and chopping. Delicious and wonderfully filling.
- a tin of red kidney beans
- 5-6 cherry tomatoes, halved
- a third of feta cheese block, cubed
- a few olives
- one beetroot (cooked), cubed
- chopped coriander leaves, some onion
- sprinkling of olive oil and balsamic vinegar
- for the adventurous types – a few grapes, halved
